An intensely savoury soy sauce, made from selected soy beans fermented with sugar and salt. A light soy sauce (also known as ‘thin’), this has a saltier flavour than dark soy sauce. An essential condiment in Asian cooking, use in marinades, stir fries, curries and dipping sauces. It also makes a great vegetarian substitute for fish sauce.
