With its deep russet colour, close flaky texture and creamy, fruity tang this traditional Red Leicester is a beautiful member of the cheeseboard line-up. Pair with a full-bodied white such as Muscadet, Vouvray or Sancerre to compliment its slightly sweet, almost caramel flavour. Though crumbly to grate, Red Leicester melts well and can be a delicious alternative to cheddar.
