The pale frill of the oyster mushroom makes it an attractive addition to the plate. One of the most popular of the cultivated mushrooms and deservedly so: creamy in flavour with a soft, meaty texture, they contain less water than many other mushrooms which means less shrinkage when cooked. Delicious simply pan fried with garlic, butter and thyme.
