Sometimes known as 'hen of the woods', maitake have frilly branch-like stems and a semi-firm, succulent texture. Traditionally found in dense clusters at the base of oak trees, maitake have a flavour faintly reminiscent of truffle with bosky, umami notes. Delicious enough to stand alone, serve simply.
