Extra fine Xanthan Gum that keeps pastry flaky and crisp and ice cream silky smooth. Use it to thicken, stabilise, emulsify and foam. It prevents the formation of ice crystals, prevents moisture leakage so pastry stays dry and crisp. Xanthan gum also prevents the separation of oil and can be used to create creamy, beautifully blended salad dressings.
