Beautifully compacted gem hearts grown by the Cuadras family in southern Spain. Deliciously sweet and tender, these hearts deliver an intense lettuce flavour and crunch, and are just as delicious when cooked as they are in salad. Braise them with peas for a melting texture and sweet, nutty flavour, slice and scatter into salads for refreshing crunch or grill with a slick of olive oil, a squeeze of lemon and crumble of sea salt for a simple side dish.
