From the Forichier mill in Northern France, this rich yet light flour has a T55 classification which makes it a great all-round flour. A great baguette flour with remarkable dough extensibility and baking to give a great crumb structure. As well as bread making, it's also great for pastry, biscuits and for thickening sauces.
