A chilli of many names, sometimes called the Hungarian wax, other times the Turkish light green, this pepper is crunchy with a sweet and tangy flavour. Its waxy, smooth flesh ripens from pale yellow-green to russet. Widely used in Hungarian cooking, it’s delicious both raw and sautéed in a range of dishes.
