One of the first crops of the year, spring cabbage has wonderfully tender leaves with a fresh mustard finish. Conical in shape and a verdant green which deepens with cooking, these cabbages look beautiful on the plate. The flavour intensifies with cooking and pairs well with other strong flavours such as onion, garlic and mustard. The salty smokiness of bacon emphasises the cabbage’s sweetness.
